| Green Teas
A tradition throughout much of the Orient, green teas are made by inhibiting the natural oxidation process during the drying of the harvested tea leaves. By contrast, oolong teas are allowed to partially oxidize and black teas are made by allowing the leaves to fully oxidize. White teas are made similar to green teas, except that newly forming but unopened leaf buds are used. The flavor and aroma of tea varies with soil, climate, method of drying and storage, much as wine grapes vary. Green teas typically have a more delicate, rather "botanical" flavor and aroma than other teas.
All tea naturally contains caffeine. For those who wish to avoid it, however, we offer a decaffeinated green tea.
